Our products take into account the lack of functioning of the kidneys, treat the malnutrition of dialyzed patients, limit salt intake as to prevent <strong>water retention<\/strong> and high blood pressure, and limit potassium and phosphorus intake to prevent muscular dysfunctions.\u00a0<\/p>\n<p>\n\t<strong>Hen with chicken sauce<\/strong><\/p>\n<h2>\n\t<span style=\"color:#43a3d7;\">Ingredients :<\/span><\/h2>\n<p>\n\t<b><i>For 6 people<\/i><\/b><\/p>\n<ul>\n<li>\n\t\t1kg hen<\/li>\n<li>\n\t\t2 laurel leaves<\/li>\n<li>\n\t\t1 small onion<\/li>\n<li>\n\t\t4 cloves<\/li>\n<li>\n\t\tThyme<\/li>\n<li>\n\t\tFennel seeds<\/li>\n<li>\n\t\t2 cloves of garlic<\/li>\n<li>\n\t\t1 celery stalk<\/li>\n<li>\n\t\t180g of turnips<\/li>\n<li>\n\t\t150g of carrots<\/li>\n<li>\n\t\t1 leek<\/li>\n<li>\n\t\tPepper<\/li>\n<li>\n\t\t250g of white rice<\/li>\n<li>\n\t\tGinger or star anise according to preference<\/li>\n<\/ul>\n<p>\n\t<strong>Poulette cream sauce<\/strong><\/p>\n<ul>\n<li>\n\t\t35g of butter<\/li>\n<li>\n\t\t35g of rice flour<\/li>\n<li>\n\t\t350mL of chicken broth<\/li>\n<li>\n\t\t1 egg yolk<\/li>\n<li>\n\t\t130g of Paris mushrooms<\/li>\n<li>\n\t\tJuice and zest of half a non-processed lemon \u00a0<\/li>\n<\/ul>\n<h2>\n\t<span style=\"color:#43a3d7;\">Preparation :<\/span><\/h2>\n<p>\n\t<strong>First, prepare the hen and its garnish. <\/strong><\/p>\n<div>\n\tRemove the offal and rinse the hen under cold water. Place it in a large pressure cooker. Add the laurel leaves, the peeled onion, the cloves, herbs, fennel seeds and the garlic cloves (after cooking them without peeling them). Pour water over the hen in the pressure cooker.<\/div>\n<div>\n\tPeel the carrots, turnips and leek and cut them in thick slices. Cut the celery stalk into three pieces. Place the vegetables around the hen, add pepper and close the pressure cooker.<\/div>\n<p>\n\t<strong>Start cooking the rice.<\/strong><\/p>\n<p>\n\tIn a cooking pot, pour 0.5L of water and add the grated ginger or some star anise flowers. Add the rice. Bring to a boil. As soon as the water starts boiling, lower the heat, cover the rice and let it cook slowly for 10-15 minutes. Drain the rice and remove the chosen spice.\u00a0<\/p>\n<p>\n\t<strong>Meanwhile, prepare the poulette cream sauce.<\/strong><\/p>\n<p>\n\tRub the mushrooms without washing them and cut the stalks. Cut the mushrooms in very thin slices. Take the zest from the lemon then press it. Take some chicken broth and filter it. Set aside.<\/p>\n<p>\n\tIn a pan, make a roux by melting the butter over low heat. Add the flour and mix immediately. Continue mixing and remove from the heat. Slowly pour the chicken broth. Add the mushroom slices. Place on low heat again and continue mixing until the poulette cream sauce thickens. It should have the consistency of pancake batter. When bubbles start appearing, turn off the heat.\u00a0<\/p>\n<p>\n\t<strong>It\u2019s ready!<\/strong><\/p>\n<p>\n\tRemove the hen from the pressure cooker and place it on a service platter. Put the rice in a salad bowl.<\/p>\n<p>\n\tIn the poulette cream sauce, incorporate the egg yolk and whip vigorously. Finally, add the lemon juice, mix together well and put the sauce over heat until it starts bubbling up again. Drizzle the sauce over the hen.
