Meat, vegetables, starchy foods and fruit can be pureed and served as starters, main courses or desserts.<\/p>\n<p class=\"rtejustify\">A\u00a0pureed meal\u00a0is composed of food\u00a0of a pasty consistency:\u00a0smooth,\u00a0with no lumps or pips.<\/p>\n<p class=\"rtejustify\">Purees can be prepared at home or purchased ready-made from supermarkets or healthfood specialists.<\/p>\n<p>\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0\u00a0<img decoding=\"async\" style=\"width: 500px; height: 259px;\" src=\"\/sites\/default\/files\/vignette_interieure_plats_mixes_3.jpg\" alt=\"\" \/><\/p>\n<h2><strong>Who is pureed food for?<\/strong><\/h2>\n<p>Pureed food can be served to:<\/p>\n<ul>\n<li><strong>the elderly<\/strong><\/li>\n<li><strong>polyhandicapped<\/strong> persons (children and adults)<\/li>\n<li>patients with <a href=\"https:\/\/www.nutrisens.com\/en\/swallowing-difficulties\/\" target=\"_blank\" rel=\"noopener\"><strong>difficulty in swallowing<\/strong><\/a><u><\/u><\/li>\n<li><strong>post-stroke<\/strong> or postoperative patients (especially ear, nose and throat conditions)<\/li>\n<li><strong>cancer<\/strong> patients (especially of the tongue, mouth and throat) or those suffering from mucositis (inflammation of the mucous membranes).<\/li>\n<li>those with <strong>dental issues<\/strong> (dentures, fillings, problems chewing)<\/li>\n<li><strong>newborn babies<\/strong>, etc.<\/li>\n<\/ul>\n<p class=\"rtejustify\">The issues may be passing, temporary or long-term. Meal consistency may vary according to <strong>ability to swallow<\/strong> and chew and regular monitoring is necessary to ensure that dishes are of a suitable consistency.<\/p>\n<h2><strong>What is the right consistency?<\/strong><\/h2>\n<p>In France a study conducted in 2007 by the GEMRCN for catering services drew up the following guidelines:<\/p>\n<ul>\n<li><strong>Liquid<\/strong>: can be drunk out of a glass or through a straw.<\/li>\n<li><strong>Thin Puree: <\/strong>smooth consistency for both meat and vegetables.<\/li>\n<li><strong>Thick Puree: <\/strong>meat is minced, vegetables are mashed or very tender.<\/li>\n<li><strong>Minced: <\/strong>only meat is minced, except if the protein element is tender.<\/li>\n<\/ul>\n<p>Sources:\u00a0<i>GUIDE DES REPAS EN EHPAD TEXTURES MODIFIEES MODE D\u2019EMPLOI\u00a0 (SOURCE ANAP)<\/i><\/p>\n<p class=\"rtejustify\">In 2014, <a href=\"https:\/\/www.nutrisens.com\/en\/vitalites\/iddsi-international-dysphagia-diet-standardisation-initiative\/\" target=\"_blank\" rel=\"noopener\">the International Dysphagia Diet Standardisation (<\/a><strong><u><a href=\"about:blank\">IDDSI<\/a><\/u><\/strong><a href=\"https:\/\/www.nutrisens.com\/en\/vitalites\/iddsi-international-dysphagia-diet-standardisation-initiative\/\" target=\"_blank\" rel=\"noopener\">)<\/a> published guidelines to bring practices into line.
